Delicious and Easy Vegetarian Dish!

Summer is the perfect time of year to eat light and healthy. If you are someone that is accustomed to healthy cooking, it's a great season to get creative and introduce new ingredients. If you're ready to kickstart some healthy habits, there is no better time than these hot few months to get started! With the long hot days our bodies tend to crave nourishing, light, and colorful food with lots of flavor. This dish is easy, affordable, nutritious, and one of my go-to lunches lately!

Ingredients:
Gardenburger Portobella Veggie Burgers
Cadia Organic Great Northern Beans
Amy's Organic Lentil Vegetable Soup
Fresh Eggplant
Fresh Goat Cheese (Garlic and Herb)
Hard Boiled Eggs
1/2 Red Onion
1/2 White Onion
Red Pepper
Olive Oil
Sea Salt
Black Pepper
Garlic Powder
Italian Herbs

Start with boiling some water to make your hard boiled eggs. I have found that 11 minutes and 11 seconds is the perfect amount of time for a great hard boiled egg. Once your water is boiling, put your eggs in and set your timer. The rest of the dish should be close to done by the time your eggs are ready to cool. 

Take your cutting board out and all of your vegetables. Start with cutting 1/2" slices of fresh eggplant, and chopping your white onion, you will be heating these up with your portobello veggie burgers. 

Next get a skillet warm on the stove, add a little bit of olive oil to the pan and mix in your onion, garlic powder, italian herbs, and salt & pepper. Once this is nice and hot (medium low), add in your portobello veggie burgers and your eggplant slices. Heat these up for approximately 5-7 minutes on each side. 

While those are heating up, mix 1 can of Cadia Organic Great Northern Beans and 1/2 a can of Amy's Organic Lentil Vegetable Soup in sauce pan.

Now, dice your red pepper, red onion, and put aside ready to top your dish.

Once the eggs are done, run cool water over them and let them cool for a few minutes. Once they are cool you can shell them and chop them in quarters. 

You're ready to plate! Scoop approximately 1 cup of the bean mixture onto your plate. Then add one cooked portobello veggie burger and one cooked sliced eggplant. Then add your red onion and red peppers on top of them. Take your chopped hardboiled eggs and goat cheese and decorate the top of the dish. Add a sprinkle of black pepper on top and you're ready to enjoy!
